Ingredients
- Chicken breasts — 2 large (about 400g each)
- Fresh spinach — 150g
- Lemon (zest and juice) — 1 large
- Garlic cloves — 3, minced
- Heavy cream — 180ml (3/4 cup)
- Parmesan cheese, grated — 40g (1/3 cup)
- Olive oil — 2 tbsp
- Butter — 1 tbsp
- Chicken broth — 120ml (1/2 cup)
- Salt — to taste
- Black pepper — to taste
- Red pepper flakes (optional) — 1/4 tsp
- Cornstarch (optional, for thickening) — 1 tsp
Directions
1. Pound chicken breasts to even thickness. Season both sides with salt and black pepper.
2. Heat olive oil and butter over medium-high heat in a large skillet. Add chicken breasts and sear 4–5 minutes per side, until golden and cooked through. Remove and set aside.
3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
4. Deglaze the pan with chicken broth, scraping up browned bits.
5. Add heavy cream, lemon zest, lemon juice, parmesan cheese, and red pepper flakes. Stir until combined and cheese is melted.
6. Mix cornstarch with a tablespoon of water (optional) and stir into the sauce if you want it thicker.
7. Return chicken to the skillet and simmer 2–3 minutes in the sauce.
8. Add fresh spinach and stir until it wilts, about 1–2 minutes.
9. Taste and adjust seasoning as needed. Serve hot over your favorite side.
