Ingredients

  • Linguine or spaghetti — 400g
  • Shrimp (peeled and deveined) — 500g
  • Butter — 2 tablespoons
  • Olive oil — 1 tablespoon
  • Garlic cloves (minced) — 4 pieces
  • Lemon (zest and juice) — 1 large
  • Heavy cream — 1 cup
  • Parmesan cheese (grated) — 1/3 cup
  • Parsley (chopped) — 2 tablespoons
  • Salt — to taste
  • Black pepper — to taste
  • Red chili flakes (optional) — 1/2 teaspoon

Directions

1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside, reserving some pasta water.
2. While pasta cooks, heat olive oil and butter in a large skillet over medium-high heat.
3. Add the shrimp and season with salt and black pepper. Sauté for 2-3 minutes until pink and opaque. Remove shrimp and set aside.
4. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
5. Pour in the heavy cream, lemon zest, and juice. Simmer the sauce for 2-3 minutes until slightly thickened.
6. Stir in parmesan cheese, mixing until melted and smooth.
7. Return shrimp to the skillet and add the drained pasta. Toss everything gently to coat in the sauce. Add some reserved pasta water if needed.
8. Season to taste with salt, pepper, and chili flakes (if using).
9. Top with chopped parsley and serve immediately, garnished with more parmesan if desired.
