- 4 pieces Chicken breasts (boneless and skinless)
- 1 cup Ricotta cheese
- 2 cups Spinach (chopped and cooked)
- 0.3333333333 cup Parmesan cheese (grated)
- 1 Egg (large)
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 2 tablespoons Olive oil
- 0.5 cup Fresh basil leaves (packed)
- 0.25 cup Fresh parsley (chopped)
- 2 cloves Garlic
- 2 tablespoons Lemon juice
- 2 tablespoons Butter
Directions
1. Preheat your oven to 375°F (190°C).
2. In a bowl, combine ricotta, cooked spinach (squeeze out the water), parmesan cheese, egg, salt, and black pepper. Mix until well blended.
3. Cut a pocket into each chicken breast without slicing all the way through. Stuff each pocket with the ricotta-spinach mixture.
