- Chicken breasts — 4 pieces, boneless and skinless
- Ricotta cheese — 1 cup
- Spinach — 2 cups, chopped and cooked
- Parmesan cheese — 1/3 cup, grated
- Egg — 1, large
- Salt — 1 teaspoon
- Black pepper — 1/2 teaspoon
- Olive oil — 2 tablespoons
- Fresh basil leaves — 1/2 cup, packed
- Fresh parsley — 1/4 cup, chopped
- Garlic — 2 cloves
- Lemon juice — 2 tablespoons
- Butter — 2 tablespoons
Directions
1. Preheat your oven to 375°F (190°C).
2. In a bowl, combine ricotta, cooked spinach (squeeze out the water), parmesan cheese, egg, salt, and black pepper. Mix until well blended.
3. Cut a pocket into each chicken breast without slicing all the way through. Stuff each pocket with the ricotta-spinach mixture.
