  • Chicken breasts — 4 pieces, boneless and skinless
  • Ricotta cheese — 1 cup
  • Spinach — 2 cups, chopped and cooked
  • Parmesan cheese — 1/3 cup, grated
  • Egg — 1, large
  • Salt — 1 teaspoon
  • Black pepper — 1/2 teaspoon
  • Olive oil — 2 tablespoons
  • Fresh basil leaves — 1/2 cup, packed
  • Fresh parsley — 1/4 cup, chopped
  • Garlic — 2 cloves
  • Lemon juice — 2 tablespoons
  • Butter — 2 tablespoons

Directions

1. Preheat your oven to 375°F (190°C).
2. In a bowl, combine ricotta, cooked spinach (squeeze out the water), parmesan cheese, egg, salt, and black pepper. Mix until well blended.
3. Cut a pocket into each chicken breast without slicing all the way through. Stuff each pocket with the ricotta-spinach mixture.
