Yantik is a traditional Uzbek dish that is loved for its rich and savory flavors. It features small dough pockets that are stuffed with a delicious mixture of minced meat, onions, and aromatic spices. The dough is rolled out thin and then folded over the filling to create small pockets. The pockets are either steamed or baked until they are cooked through and have a slightly crispy exterior. Yantik is often served as a main course and is enjoyed with yogurt or a spicy dipping sauce. This dish is a true delight for meat lovers and showcases the culinary heritage of Uzbekistan.
Ingredients
- All-purpose flour — 2 cups
- Water — 1 cup
- Ground beef or lamb — 1 pound
- Onion, finely chopped — 1 large
- Garlic cloves, minced — 3
- Ground cumin — 1 teaspoon
- Ground paprika — 1 teaspoon
- Salt — 1/2 teaspoon
- Black pepper — 1/4 teaspoon
- Vegetable oil — 2 tablespoons
Directions
1. In a large bowl, combine the flour and water to make a soft dough. Knead the dough for about 5 minutes until it becomes smooth and elastic. Cover the dough and let it rest for 30 minutes.
2. In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Cook until the onions are translucent.
3. Add the ground beef or lamb to the skillet and cook until browned. Break up any lumps with a spoon while cooking.
4. Stir in the ground cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat and let the filling cool.
5. Divide the dough into small portions and roll each portion into a thin circle.
6. Place a spoonful of the meat filling onto one half of each dough circle. Fold the other half over the filling to create a half-moon shape. Press the edges firmly to seal the pockets.
7. Repeat the process until all the dough and filling are used.
8. If steaming: Arrange the filled pockets in a steamer basket and steam for about 20 minutes, or until the dough is cooked through.
9. If baking: Preheat the oven to 375°F (190°C). Place the filled pockets on a baking sheet and bake for 25-30 minutes, or until the dough is golden brown and cooked through.
10. Serve the Yantik hot with yogurt or a spicy dipping sauce. Enjoy the delicious flavors of this traditional Uzbek dish!
