Vichyssoise is a traditional French soup that is served chilled and known for its creamy and silky texture. It is made with simple ingredients such as leeks, potatoes, cream, and chicken broth. - 4 large Leeks (white and light green parts only, thinly sliced)
- 2 large Potatoes (peeled and diced)
- 4 cups Chicken broth
- 1 cup Heavy cream
- 2 tablespoons Butter
- 1 teaspoon Salt
- 0.25 teaspoon White pepper
- 2 tablespoons Chives (chopped (for garnish))
Directions
1. In a large pot, melt the butter over medium heat.
2. Add the sliced leeks and sauté for about 5 minutes, until they become soft and translucent.
3. Add the diced potatoes, chicken broth, salt, and white pepper to the pot. Bring to a boil, then reduce the heat to low.
4. Simmer the soup for about 20 minutes, or until the potatoes are tender and easily mashed with a fork.
5. Remove the pot from the heat and let the soup cool slightly.
6. Using an immersion blender or a countertop blender, puree the soup until smooth and creamy.
7. Stir in the heavy cream and mix well. Adjust the seasoning if needed.
8. Cover the soup and refrigerate for at least 4 hours, or until chilled.
9. Before serving, garnish with chopped chives.
10. Serve the Vichyssoise chilled and enjoy!
