Ingredients
- Beets — 2 large, peeled and grated
- Cabbage — 1/2 small head, shredded
- Carrots — 2 medium, peeled and grated
- Onion — 1 large, chopped
- Potatoes — 2 medium, peeled and diced
- Garlic — 3 cloves, minced
- Beef or pork (optional) — 1/2 pound, diced
- Beef or vegetable broth — 6 cups
- Tomato paste — 2 tablespoons
- Bay leaves — 2
- Fresh dill — 2 tablespoons, chopped
- Salt — 1 teaspoon, or to taste
- Black pepper — 1/2 teaspoon, or to taste
- Sour cream (for serving) — To taste
Directions
1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
2. If using meat, add the diced beef or pork to the pot and cook until browned on all sides.
3. Add the grated beets, shredded cabbage, grated carrots, diced potatoes, beef or vegetable broth, and bay leaves to the pot. Stir well to combine.
4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 30 minutes, or until the vegetables are tender.
5. Stir in the tomato paste and season with salt and black pepper to taste. Simmer for an additional 10 minutes.
6. Remove the bay leaves from the pot. Taste the borscht and adjust the seasoning if needed.
7. Serve the Ukrainian Borscht hot, garnished with fresh dill and a dollop of sour cream.
