Turkey Perchesh

Perchesh is a traditional Ukrainian dish known for its rich flavors and comforting qualities. This recipe puts a twist on the classic by incorporating turkey meat, which adds a lean and healthy protein source. The dish is made by simmering turkey with a medley of vegetables and aromatic herbs and spices. The result is a hearty and satisfying meal that is perfect for family gatherings or special occasions.

Ingredients

  • Turkey breast — 500 grams, boneless and skinless
  • Onion — 1 large, finely chopped
  • Carrots — 2 medium-sized, diced
  • Potatoes — 3 medium-sized, peeled and cubed
  • Tomato paste — 2 tablespoons
  • Garlic — 3 cloves, minced
  • Red bell pepper — 1, diced
  • Cabbage — 1/2 small head, shredded
  • Bay leaves — 2
  • Dried thyme — 1 teaspoon
  • Paprika — 1 teaspoon
  • Salt — to taste
  • Black pepper — to taste
  • Vegetable oil — 2 tablespoons
  • Fresh parsley — for garnish

Directions

1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and the garlic is fragrant.
3. Add the diced carrots and red bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
4. Cut the turkey breast into bite-sized pieces and add them to the pot. Cook until the turkey is browned on all sides.
5. Stir in the tomato paste, dried thyme, paprika, salt, and black pepper. Mix well to coat the ingredients.
6. Add the cubed potatoes and shredded cabbage to the pot. Pour enough water to cover all the ingredients.
7. Place the bay leaves on top of the mixture and bring the pot to a boil. Reduce the heat to low, cover, and simmer for about 30-40 minutes or until the turkey is cooked through and the vegetables are tender.
8. Remove the bay leaves from the pot and adjust the seasoning if needed.
9. Serve the turkey perchesh hot, garnished with fresh parsley.
