- 4 cups Chicken or vegetable broth
- 8 ounces Tortellini
- 2 Carrots (medium, thinly sliced)
- 2 stalks Celery (thinly sliced)
- 1 Onion (medium, diced)
- 3 cloves Garlic (minced)
- 2 tablespoons Olive oil
- 1 teaspoon Italian seasoning
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper (freshly ground)
- 2 tablespoons Fresh parsley (chopped (for garnish))
Directions
1. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, sliced carrots, and sliced celery. Cook until the vegetables are slightly softened, about 5 minutes.
2. Pour the chicken or vegetable broth into the pot and bring it to a boil. Reduce the heat to low and let the broth simmer for about 10 minutes to allow the flavors to meld together.
3. Add the tortellini to the simmering broth and cook according to the package instructions until the pasta is al dente.
4. Once the tortellini is cooked, season the soup with Italian seasoning, salt, and black pepper. Adjust the seasonings to taste.
