Tartiflette

A delicious French dish made with potatoes, cheese, bacon, and onions.

Tartiflette is a traditional French dish originating from the Savoie region. It is made with layers of sliced potatoes, reblochon cheese, crispy bacon, and sautéed onions. The dish is baked until the cheese is melted and bubbly, resulting in a rich and comforting meal that is perfect for cold weather.

Ingredients

  • Potatoes — 1.5 kg (3.3 lbs)
  • Reblochon cheese — 1 wheel (about 450g or 1 lb)
  • Bacon — 200g (7 oz), diced
  • Onion — 1 large, thinly sliced
  • Garlic — 2 cloves, minced
  • White wine — 120ml (1/2 cup)
  • Butter — 2 tablespoons
  • Salt — 1/2 teaspoon
  • Black pepper — 1/4 teaspoon

Directions

1. Preheat the oven to 200°C (400°F).
2. Peel the potatoes and cut them into thin slices.
3. Bring a large pot of salted water to a boil. Add the potato slices and cook for about 5 minutes, until slightly tender. Drain and set aside.
4. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the pan.
5. Add the sliced onions to the skillet and sauté them in the bacon grease until soft and translucent. Add the minced garlic and cook for an additional minute.
6. Pour in the white wine and let it simmer for a few minutes until it has reduced slightly.
7. Butter a baking dish and layer half of the cooked potatoes on the bottom. Season with salt and pepper.
8. Spread half of the sautéed onions and bacon over the potatoes.
9. Cut the reblochon cheese wheel in half horizontally. Place one half on top of the onions and bacon.
10. Repeat the layers with the remaining potatoes, onions, and bacon. Place the other half of the reblochon cheese on top.
11. Bake in the preheated oven for about 30 minutes, or until the cheese is melted and golden brown.
12. Remove from the oven and let it cool for a few minutes before serving.
13. Serve the tartiflette hot and enjoy!
