Salade Niçoise is a classic French salad originating from the city of Nice. This refreshing and vibrant salad combines a variety of fresh ingredients, including mixed greens, tomatoes, green beans, boiled eggs, olives, and tuna. It is typically dressed with a light vinaigrette and garnished with anchovies and capers. Salade Niçoise is a perfect choice for a light lunch or dinner, especially during the warm summer months.

- 4 cups Mixed salad greens
- 2 large Tomatoes (sliced)
- 1 cup Green beans (blanched)
- 1 can Canned tuna ((5 ounces), drained)
- 4 Hard-boiled eggs (sliced)
- 0.5 cup Olives (pitted)
- 4 fillets Anchovy fillets
- 2 tablespoons Capers
- 0.25 cup Red onion (thinly sliced)
- 2 tablespoons Fresh parsley (chopped)
- 3 tablespoons Extra-virgin olive oil
- 1 tablespoon Red wine vinegar
- 1 teaspoon Dijon mustard
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
Directions
1. In a large salad bowl, arrange the mixed salad greens as the base of the salad.
2. Arrange the sliced tomatoes, blanched green beans, tuna, hard-boiled eggs, olives, anchovy fillets, capers, and red onion on top of the salad greens.
3. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
4. Drizzle the dressing over the salad.
5. Gently toss the salad to coat all the ingredients with the dressing.
6. Garnish the salad with fresh parsley.
7. Serve the Salade Niçoise immediately and enjoy its refreshing flavors.
