Ingredients
- Mixed salad greens — 4 cups
- Tomatoes — 2 large, sliced
- Green beans — 1 cup, blanched
- Canned tuna — 1 can (5 ounces), drained
- Hard-boiled eggs — 4, sliced
- Olives — 1/2 cup, pitted
- Anchovy fillets — 4 fillets
- Capers — 2 tablespoons
- Red onion — 1/4 cup, thinly sliced
- Fresh parsley — 2 tablespoons, chopped
- Extra-virgin olive oil — 3 tablespoons
- Red wine vinegar — 1 tablespoon
- Dijon mustard — 1 teaspoon
- Salt — 1/2 teaspoon
- Black pepper — 1/4 teaspoon
Directions
1. In a large salad bowl, arrange the mixed salad greens as the base of the salad.
2. Arrange the sliced tomatoes, blanched green beans, tuna, hard-boiled eggs, olives, anchovy fillets, capers, and red onion on top of the salad greens.
3. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
4. Drizzle the dressing over the salad.
