Rooster in Wine is a classic French dish that combines the rich flavors of rooster meat with the depth of red wine and fragrant herbs. The rooster is braised in a mixture of wine, onions, carrots, garlic, and herbs until it becomes tender and infused with delicious flavors. This dish is perfect for special occasions or when you want to impress your guests with a hearty and sophisticated meal.

- 1 whole Rooster (about 2.5 kg or 5.5 lbs)
- 750 ml Red wine (3 cups)
- 1 Onion (large, chopped)
- 2 Carrots (medium, sliced)
- 4 cloves Garlic (minced)
- 2 sprigs Thyme
- 1 sprig Rosemary
- 2 leaves Bay leaves
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
Directions
1. Cut the rooster into serving pieces, such as legs, thighs, and breasts.
2. In a large Dutch oven or a heavy-bottomed pot, heat the olive oil over medium heat.
3. Add the rooster pieces to the pot and brown them on all sides until they develop a golden crust. Remove the rooster pieces and set aside.
4. In the same pot, add the chopped onion, sliced carrots, and minced garlic. Sauté until the vegetables become soft and fragrant.
5. Return the rooster pieces to the pot and pour in the red wine. Add the thyme, rosemary, bay leaves, salt, and black pepper.
6. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the rooster braise for about 2 to 2.5 hours, or until the meat is tender and easily falls off the bone.
7. Once cooked, remove the rooster pieces from the pot and set them aside. Discard the bay leaves and herb sprigs.
8. If desired, you can strain the cooking liquid to remove any solids and reduce the sauce.
9. Serve the rooster pieces with the reduced sauce and accompany with your choice of side dishes, such as roasted potatoes or steamed vegetables.
