A flavorful Indian lamb curry cooked in a rich tomato-based sauce.

Rogan Josh is a classic Kashmiri dish known for its rich and aromatic flavors. It is a slow-cooked lamb curry that features a blend of spices and a luscious tomato-based sauce. The dish is known for its vibrant red color, which comes from the use of Kashmiri red chili powder. Rogan Josh is traditionally enjoyed with rice or Indian bread, such as naan or roti. It is a perfect choice for those who appreciate hearty and flavorful curries.

Ingredients

  • Lamb — 500 grams, bone-in, cut into pieces
  • Yogurt — 1 cup, whisked
  • Onion — 2 large, finely chopped
  • Ginger-garlic paste — 2 tablespoons
  • Tomatoes — 2 large, pureed
  • Kashmiri red chili powder — 2 teaspoons
  • Cumin powder — 1 teaspoon
  • Coriander powder — 1 teaspoon
  • Turmeric powder — 1/2 teaspoon
  • Garam masala — 1 teaspoon
  • Cardamom pods — 3
  • Cinnamon stick — 1 inch
  • Cloves — 3
  • Bay leaves — 2
  • Oil — 3 tablespoons
  • Fresh coriander leaves — 2 tablespoons, chopped (for garnish)
  • Salt — to taste
  • Water — 1 cup

Directions

1. Heat oil in a large pan or Dutch oven over medium heat.
2. Add cardamom pods, cinnamon stick, cloves, and bay leaves. Sauté for a minute until fragrant.
3. Add chopped onions and sauté until golden brown.
4. Add ginger-garlic paste and sauté for another minute.
5. Add lamb pieces to the pan and cook until browned on all sides.
6. Add Kashmiri red chili powder, cumin powder, coriander powder, turmeric powder, and salt. Mix well to coat the lamb with the spices.
7. Add tomato puree and cook for 2-3 minutes until the oil starts to separate from the mixture.
8. Reduce the heat to low and add whisked yogurt. Stir well to combine.
9. Add water, cover the pan, and simmer for about 1.5 to 2 hours or until the lamb is tender. Stir occasionally and add more water if needed.
10. Once the lamb is cooked, sprinkle garam masala over the curry and mix gently.
11. Remove from heat and garnish with chopped fresh coriander leaves.
12. Serve hot with steamed rice or Indian bread of your choice.
