Ingredients

  • Bone-in, skin-on chicken thighs — 6 pieces
  • Yukon Gold potatoes — 4 medium, cut into wedges
  • Fresh garlic cloves — 6, whole
  • Fresh rosemary — 2 tablespoons, chopped
  • Fresh thyme — 1 tablespoon, chopped
  • Fresh parsley — 2 tablespoons, chopped
  • Lemon juice — 2 tablespoons, freshly squeezed
  • Lemon zest — 1 teaspoon
  • Olive oil — 3 tablespoons
  • Salt — 1.5 teaspoons
  • Black pepper — 1 teaspoon
  • Paprika — 1 teaspoon
  • Lemon wedges — For garnish

Directions

1. In a large bowl, combine the olive oil, lemon juice, lemon zest, rosemary, thyme, parsley, salt, pepper, and paprika.
2. Add the chicken thighs and potato wedges to the bowl, tossing everything to coat well with the marinade. Ensure each piece is evenly covered.
3. Cover the bowl and let marinate in the fridge for at least 30 minutes (up to 4 hours for deeper flavor).
4. Preheat your oven to 425°F (218°C). Arrange the chicken thighs skin-side up and the potatoes in a single layer on a large roasting pan. Tuck whole garlic cloves among the chicken and potatoes.
5. Roast uncovered for 40-45 minutes, or until the chicken skin is golden, the internal temperature reaches 165°F (74°C), and the potatoes are crisp and cooked through.
6. If desired, broil for an additional 2-3 minutes to further crisp the chicken skin and edge the potatoes.
7. Remove from the oven and let it rest for 5 minutes. Garnish with extra chopped parsley, fresh lemon wedges, and serve hot.
