Ingredients

  • Eggplant — 1 medium, cubed
  • Zucchini — 2 medium, cubed
  • Red bell pepper — 1, diced
  • Yellow bell pepper — 1, diced
  • Onion — 1 large, diced
  • Garlic cloves — 3, minced
  • Tomatoes — 4, diced
  • Fresh basil — 1/4 cup, chopped
  • Fresh thyme — 1 teaspoon
  • Olive oil — 3 tablespoons
  • Salt — 1 teaspoon
  • Black pepper — 1/2 teaspoon

Directions

1. Heat olive oil in a large skillet or Dutch oven over medium heat.
2. Add the diced onion and minced garlic. Sauté until fragrant and translucent.
3. Add the diced bell peppers and cook for a few minutes until slightly softened.
4. Add the cubed eggplant and zucchini. Stir well to combine.
5. Add the diced tomatoes, fresh basil, and thyme. Season with salt and black pepper.
6. Reduce the heat to low, cover, and simmer for about 30-40 minutes, stirring occasionally.
