- 1 medium Eggplant (cubed)
- 2 medium Zucchini (cubed)
- 1 Red bell pepper (diced)
- 1 Yellow bell pepper (diced)
- 1 large Onion (diced)
- 3 Garlic cloves (minced)
- 4 Tomatoes (diced)
- 0.25 cup Fresh basil (chopped)
- 1 teaspoon Fresh thyme
- 3 tablespoons Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
Directions
1. Heat olive oil in a large skillet or Dutch oven over medium heat.
2. Add the diced onion and minced garlic. Sauté until fragrant and translucent.
3. Add the diced bell peppers and cook for a few minutes until slightly softened.
4. Add the cubed eggplant and zucchini. Stir well to combine.
5. Add the diced tomatoes, fresh basil, and thyme. Season with salt and black pepper.
6. Reduce the heat to low, cover, and simmer for about 30-40 minutes, stirring occasionally.
7. The ratatouille is ready when the vegetables are tender but still hold their shape.
8. Taste and adjust the seasoning if needed.
9. Serve the ratatouille hot or at room temperature.
