Delicious homemade quesadilla recipe

Quesadilla is a delicious and popular Mexican dish that consists of a tortilla filled with melted cheese and other savory ingredients. It is typically cooked on a griddle or in a skillet until the cheese is melted and the tortilla becomes crispy. Quesadillas can be customized with various fillings such as grilled chicken, beef, vegetables, or beans. They are often served with salsa, guacamole, and sour cream as condiments. Quesadillas are perfect for a quick and satisfying meal or as a tasty snack.

Ingredients

  • Tortillas — 4
  • Cheddar cheese — 1 cup, shredded
  • Cooked chicken — 1 cup, shredded
  • Bell pepper — 1, sliced
  • Onion — 1, sliced
  • Tomato — 1, diced
  • Jalapeno — 1, sliced (optional)
  • Olive oil — 2 tablespoons
  • Salt — to taste
  • Black pepper — to taste
  • Sour cream — 1/2 cup
  • Salsa — 1/2 cup

Directions

1. In a large skillet, heat olive oil over medium heat.
2. Add sliced bell pepper and onion to the skillet. Sauté until they become tender.
3. Add diced tomato and jalapeno (if using) to the skillet. Cook for an additional 2-3 minutes.
4. Remove the vegetable mixture from the skillet and set it aside.
5. Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese on top.
6. Add half of the cooked chicken and half of the vegetable mixture on one side of the tortilla.
7. Season with salt and black pepper to taste.
8. Fold the tortilla in half, pressing it gently with a spatula.
9. Cook the quesadilla for 2-3 minutes on each side, until the cheese melts and the tortilla turns golden brown.
10. Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas and fillings.
11. Cut each quesadilla into wedges and serve hot with sour cream and salsa on the side.
