Onion Soup is a classic and hearty soup that is perfect for cooler weather. This comforting dish is made by slowly caramelizing onions to bring out their natural sweetness and depth of flavor. The caramelized onions are then simmered in a rich broth and topped with toasted bread and melted cheese. The result is a warm and satisfying soup that is sure to please your taste buds.

Ingredients

  • Yellow onions — 4 large, thinly sliced
  • Butter — 4 tablespoons
  • Beef or vegetable broth — 6 cups
  • Dry white wine — 1/2 cup
  • Fresh thyme — 1 teaspoon, chopped
  • Bay leaf — 1
  • Baguette — 4 slices
  • Gruyère or Swiss cheese — 1 cup, grated
  • Salt — 1/2 teaspoon
  • Black pepper — 1/4 teaspoon

Directions

1. In a large soup pot, melt the butter over medium heat.
2. Add the sliced onions and cook, stirring occasionally, until they caramelize and turn golden brown. This process may take about 30-40 minutes.
3. Once the onions are caramelized, add the chopped thyme and cook for an additional minute.
4. Pour in the white wine to deglaze the pot, scraping the bottom to release any browned bits.
5. Add the beef or vegetable broth, bay leaf, salt, and black pepper to the pot. Stir well to combine.
6. Bring the soup to a simmer and let it cook for about 20-30 minutes to allow the flavors to meld together.
7. While the soup is simmering, preheat the broiler in your oven.
8. Place the slices of baguette on a baking sheet and toast them under the broiler until golden brown on both sides.
9. Remove the bay leaf from the soup.
10. Ladle the soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl, and sprinkle with grated Gruyère or Swiss cheese.
11. Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
12. Carefully remove the bowls from the broiler, as they will be hot.
13. Serve the Onion Soup hot and enjoy its rich flavors.
