- 1 cup All-purpose flour
- 1 cup Milk
- 2 Eggs
- 0.25 teaspoon Salt
- 1 cup Cottage cheese
- 2 tablespoons Sugar
- 0.5 teaspoon Vanilla extract
- 0.25 cup Raisins
- 2 tablespoons Butter (for frying)
- Sour cream or fruit preserves (for serving)
Directions
1. In a mixing bowl, combine the flour, milk, eggs, and salt. Whisk until smooth and no lumps remain.
2. Heat a non-stick frying pan over medium heat and add a small amount of butter to coat the pan.
3. Pour about 1/4 cup of the pancake batter into the pan and swirl it around to form a thin and even pancake.
4. Cook the pancake for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Flip the pancake and cook for an additional 1-2 minutes on the other side. Repeat with the remaining batter to make more pancakes.
5. In a separate bowl, combine the cottage cheese, sugar, vanilla extract, and raisins. Mix well to combine.
6. Spread a spoonful of the cottage cheese filling onto each pancake. Roll up the pancake to enclose the filling.
7. Serve the nalistniki warm or chilled. They can be enjoyed on their own or with a dollop of sour cream or fruit preserves.
