Ingredients
- Long-grain rice — 1 cup
- Tomato — 1, large
- Onion — 1/2, finely chopped
- Garlic cloves — 2, minced
- Chicken or vegetable broth — 2 cups
- Vegetable oil — 2 tablespoons
- Cumin — 1 teaspoon
- Salt — 1 teaspoon
- Fresh cilantro — 2 tablespoons, chopped (for garnish)
Directions
1. Rinse the rice under cold water until the water runs clear. Drain well.
2. In a blender, combine the tomato and 1/4 cup of water. Blend until smooth.
3. Heat the vegetable oil in a large saucepan over medium heat.
4. Add the chopped onion and minced garlic to the saucepan. Sauté for 2-3 minutes until the onion becomes translucent.
5. Add the rice to the saucepan and stir to coat it with the oil.
6. Pour in the blended tomato mixture and stir well.
7. Add the cumin and salt to the saucepan. Stir to combine all the ingredients.
