- chicken thighs (bone-in, skin-on) — 4 pieces
- lemon juice — 2 tablespoons
- olive oil — 3 tablespoons
- garlic cloves (minced) — 4
- fresh rosemary (chopped) — 2 teaspoons
- fresh thyme (chopped) — 2 teaspoons
- salt — 1 1/2 teaspoons
- black pepper — 1 teaspoon
- baby potatoes (halved) — 1 lb (450 g)
- unsalted butter (melted) — 3 tablespoons
- lemon (sliced) — 1
- fresh parsley (chopped) — 2 tablespoons
Directions
1. Preheat oven to 400°F (200°C).
2. In a large bowl, mix lemon juice, olive oil, minced garlic, rosemary, thyme, salt, and black pepper.
3. Add chicken thighs to marinade and coat well. Let sit for at least 15 minutes.
