- 700 grams Chicken breast (cut into 2-inch cubes)
- 3 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 3 Garlic cloves (minced)
- 2 tablespoons Fresh parsley (chopped)
- 1 tablespoon Fresh oregano (chopped)
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 1 cup Greek yogurt
- 0.5 Cucumber (grated)
- 1 tablespoon Fresh mint (chopped)
- 1 teaspoon Lemon zest
- 6 Wooden skewers (8, soaked in water)
Directions
1. In a large bowl, mix olive oil, lemon juice, minced garlic, parsley, oregano, salt, and black pepper.
2. Add the chicken cubes to the marinade. Toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).
3. While the chicken marinates, prepare the yogurt sauce: Combine Greek yogurt, grated cucumber, mint, lemon zest, and a pinch of salt in a small bowl. Mix well and refrigerate until ready to serve.
4. Thread the marinated chicken pieces onto soaked wooden skewers.
5. Preheat a grill or grill pan over medium-high heat. Lightly oil the grates.
6. Grill the chicken skewers for 10–12 minutes, turning occasionally, until cooked through and nicely charred.
