Ingredients

  • Ground beef or lamb — 1 pound
  • Onion, finely chopped — 1 medium
  • Cilantro, finely chopped — 1/4 cup
  • Garlic cloves, minced — 3
  • Salt — 1 teaspoon
  • Black pepper — 1/2 teaspoon
  • Water — 1 cup
  • All-purpose flour — 3 cups
  • Salt — 1 teaspoon
  • Water — 1 cup

Directions

1. In a large mixing bowl, combine ground beef or lamb, finely chopped onion, cilantro, minced garlic, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
2. In a separate bowl, prepare a small cup of water for sealing the dumplings.
3. In another bowl, combine all-purpose flour and salt. Gradually add water while kneading until a smooth and elastic dough is formed. Let the dough rest for 30 minutes.
4. Divide the dough into small portions and roll each portion into a thin circle on a floured surface.
5. Place a spoonful of the filling in the center of each dough circle. Fold the dough in half to form a semicircle and pinch the edges together, starting from one end and working your way to the other, creating pleats as you go. Leave a small hole at the top to release steam while cooking.
6. Repeat the process with the remaining dough and filling until all the khinkali are formed.
7. Bring a large pot of water to a boil. Add salt to the boiling water.
8. Carefully place the khinkali in the boiling water and cook for about 10-12 minutes or until they float to the surface.
9. Using a slotted spoon, remove the cooked khinkali from the pot and transfer them to a serving plate.
10. Serve the khinkali hot, sprinkled with black pepper and accompanied by a dipping sauce of your choice.
11. Enjoy these flavorful Georgian dumplings with friends and family!
12. გემრიელად მოგვიანებით! (Bon appétit!)
