Harcho is a flavorful Georgian soup known for its rich and spicy taste. It is made with tender beef, tomatoes, and a blend of aromatic spices. This hearty soup is perfect for warming up on cold days and is a popular dish in Georgian cuisine.

- 500 grams Beef
- 1 Onion (large, finely chopped)
- 3 cloves Garlic (minced)
- 2 Tomatoes (large, peeled and chopped)
- 2 tablespoons Tomato paste
- 0.25 cup Rice
- 1 tablespoon Red pepper paste
- 1 teaspoon Ground coriander
- 1 teaspoon Ground cumin
- 1 teaspoon Ground paprika
- 0.5 teaspoon Dried marigold petals
- Salt (to taste)
- Black pepper (to taste)
- Fresh cilantro (for garnish)
- Lemon wedges (for serving)
Directions
1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are golden and fragrant.
2. Add the beef to the pot and cook until it is browned on all sides.
3. Stir in the chopped tomatoes, tomato paste, and red pepper paste. Cook for a few minutes until the tomatoes are soft and the flavors are well combined.
4. Add the ground coriander, cumin, paprika, dried marigold petals, salt, and black pepper. Stir well to coat the meat and vegetables with the spices.
5. Pour in enough water to cover the ingredients in the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour or until the beef is tender.
6. Add the rice to the soup and continue cooking for another 20 minutes or until the rice is fully cooked.
7. Taste the soup and adjust the seasoning if needed.
8. Serve the harcho soup hot, garnished with fresh cilantro and accompanied by lemon wedges. Enjoy!
