- 2 cups All-purpose flour
- 1 teaspoon Instant yeast
- 1 teaspoon Sugar
- 0.5 teaspoon Salt
- 0.75 cup Warm water
- 2 tablespoons Olive oil
- 1 cup Feta cheese (crumbled)
- 1 cup Fresh cherries (pitted and halved)
- 2 cups Fresh spinach leaves
- 0.5 cup Red onion (thinly sliced)
- 2 tablespoons Fresh mint leaves (chopped)
- 1 teaspoon Lemon zest
- 0.25 teaspoon Ground black pepper
Directions
1. In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.
2. Add the warm water and olive oil to the flour mixture. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
3. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it doubles in size.
4. Preheat the oven to 425°F (220°C).
5. Punch down the dough to release any air bubbles. Divide the dough into two equal portions.
6. Roll out each portion into an oval or rectangular shape, about 1/4 inch thick.
7. Transfer the dough to a baking sheet lined with parchment paper.
8. Spread half of the crumbled feta cheese evenly over each dough portion.
9. Arrange the halved cherries, spinach leaves, and sliced red onion on top of the feta cheese.
10. Sprinkle the chopped mint leaves, lemon zest, and ground black pepper over the toppings.
11. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the toppings are slightly caramelized.
12. Remove from the oven and let the pide cool for a few minutes before slicing.
