Ingredients

  • Chicken breast — 2, boneless and skinless
  • Bell peppers — 2, sliced
  • Onion — 1, sliced
  • Lime — 1, juiced
  • Olive oil — 2 tablespoons
  • Fajita seasoning — 2 tablespoons
  • Tortillas — 8
  • Sour cream — 1/2 cup
  • Guacamole — 1/2 cup
  • Salsa — 1/2 cup
  • Cilantro — for garnish

Directions

1. Slice the chicken breast into thin strips.
2. In a bowl, combine the chicken strips, fajita seasoning, and lime juice. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.
3. Heat olive oil in a large skillet or grill pan over medium-high heat.
4. Add the marinated chicken strips to the skillet and cook for 5-7 minutes, until they are cooked through and slightly browned. Remove the chicken from the skillet and set it aside.
5. In the same skillet, add sliced bell peppers and onion. Sauté for 5-7 minutes, until they are tender and slightly charred.
6. Return the cooked chicken to the skillet and stir it together with the sautéed vegetables. Cook for an additional 2-3 minutes to allow the flavors to blend.
7. Warm the tortillas in a separate skillet or in the oven.
8. Serve the fajitas by spooning the chicken and vegetable mixture onto each tortilla.
9. Top the fajitas with sour cream, guacamole, salsa, and garnish with cilantro.
