Ingredients

  • Potatoes — 4 large, peeled and grated
  • Onion — 1 medium, grated
  • Egg — 1 large
  • All-purpose flour — 2 tablespoons
  • Salt — 1 teaspoon, or to taste
  • Black pepper — 1/2 teaspoon, or to taste
  • Vegetable oil — For frying
  • Sour cream or applesauce — For serving

Directions

1. Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture.
2. In a large bowl, combine the grated potatoes, grated onion, egg, flour, salt, and black pepper. Mix well until everything is evenly combined.
3. Heat a generous amount of vegetable oil in a large skillet over medium heat.
4. Scoop about 1/4 cup of the potato mixture and drop it into the hot skillet. Flatten the mixture with a spatula to form a pancake shape.
5. Cook the pancake for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining potato mixture, adding more oil to the skillet as needed.
6. Transfer the cooked Deruny to a paper towel-lined plate to drain any excess oil.
7. Serve the Deruny hot with a dollop of sour cream or applesauce on top.
8. Enjoy the delicious and crispy Deruny as a main dish or side!
