- 1 cup Split lentils (e.g., red lentils or yellow lentils)
- 4 cups Water
- 2 tablespoons Oil or ghee
- 1 teaspoon Cumin seeds
- 1 medium-sized Onion (finely chopped)
- 3 cloves Garlic (minced)
- 1 inch piece Ginger (grated)
- 1 medium-sized Tomato (finely chopped)
- 0.5 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 0.5 teaspoon Red chili powder (adjust to taste)
- Salt (to taste)
- 1 tablespoon Lemon juice
- 2 tablespoons Fresh coriander leaves (chopped (for garnish))
Directions
1. Rinse the lentils under running water until the water runs clear.
2. In a large pot, combine the lentils and water. Bring to a boil over medium heat.
3. Skim off any foam that rises to the surface. Reduce the heat to low and simmer, partially covered, for about 20-25 minutes or until the lentils are soft and cooked through.
4. While the lentils are cooking, heat oil or ghee in a separate pan over medium heat.
5. Add cumin seeds and let them splutter.
6. Add finely chopped onions and sauté until they turn golden brown.
7. Add minced garlic and grated ginger. Cook for a minute until fragrant.
8. Add finely chopped tomatoes and cook until they become soft and mushy.
9. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Stir well to combine the spices with the onion-tomato mixture.
10. Transfer the cooked lentils to the pan and mix well with the spice mixture.
11. Simmer the soup for an additional 5-10 minutes to allow the flavors to meld together.
12. Stir in lemon juice for a tangy kick.
13. Remove from heat and garnish with freshly chopped coriander leaves.
14. Serve hot with rice or bread.
