Ingredients

  • Chicken pieces — 4-6 pieces
  • Red bell pepper — 1, sliced
  • Green bell pepper — 1, sliced
  • Onion — 1, thinly sliced
  • Garlic cloves — 3, minced
  • Tomatoes — 2, chopped
  • Chicken broth — 1 cup
  • Dry white wine — 1/2 cup
  • Paprika — 1 teaspoon
  • Dried oregano — 1 teaspoon
  • Salt — 1/2 teaspoon
  • Black pepper — 1/4 teaspoon
  • Olive oil — 2 tablespoons
  • Fresh parsley — 2 tablespoons, chopped

Directions

1. Preheat the oven to 375°F (190°C).
2. Season the chicken pieces with salt, black pepper, and paprika.
3. Heat olive oil in a large oven-safe skillet over medium-high heat.
4. Add the chicken pieces and cook until browned on both sides. Remove and set aside.
5. In the same skillet, add the sliced bell peppers, onion, and minced garlic. Cook until softened.
6. Add the chopped tomatoes, dried oregano, salt, and black pepper. Stir well to combine.
7. Pour in the chicken broth and white wine. Bring to a simmer.
8. Return the chicken pieces to the skillet, nestling them into the sauce.
9. Cover the skillet with foil and transfer to the preheated oven.
10. Bake for 25-30 minutes or until the chicken is cooked through and tender.
11. Garnish with fresh parsley before serving.
