Burma is a traditional sweet pastry enjoyed in many Middle Eastern and Mediterranean countries. It is made by rolling thin layers of pastry dough and filling it with a mixture of finely chopped nuts, such as walnuts or pistachios, and sweetened with a fragrant syrup. The layers are then rolled into a cylindrical shape and baked until golden and crispy. The final step involves soaking the freshly baked pastries in a syrup made with sugar, water, and a hint of lemon juice or rose water. Ingredients

  • Phyllo pastry sheets — 12 sheets
  • Mixed nuts (e.g., walnuts, pistachios) — 2 cups, finely chopped
  • Sugar — 1 cup
  • Water — 1 cup
  • Butter — 1/2 cup, melted
  • Lemon juice or rose water — 1 tablespoon

Directions

1. Preheat the oven to 350°F (175°C).
2. In a bowl, combine the chopped nuts and sugar. Mix well to evenly distribute the sugar among the nuts.
3. Brush a baking dish with melted butter.
4. Place one sheet of phyllo pastry on a clean surface and brush it with melted butter. Repeat this process with five more sheets, stacking them on top of each other and brushing each sheet with butter.
5. Spread a layer of the nut mixture evenly over the top sheet of phyllo pastry.
6. Repeat the process of layering phyllo pastry sheets and brushing them with butter until all the sheets and nut mixture are used.
7. Using a sharp knife, cut the layered pastry into equal-sized rectangular pieces or triangles.
8. Place the pastries in the prepared baking dish and bake for about 30 minutes, or until golden and crisp.
9. While the pastries are baking, prepare the syrup. In a saucepan, combine the water, sugar, and lemon juice or rose water. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes until the syrup thickens slightly.
10. Remove the baked pastries from the oven and immediately pour the warm syrup over them. Ensure that the syrup is evenly distributed over all the pastries.
11. Allow the burma to cool and soak in the syrup for at least 1 hour before serving.
12. Serve the burma as a delicious sweet treat for dessert or enjoy it with a cup of tea or coffee.
