- 2 Potatoes (medium-sized, peeled and cubed)
- 1 Cauliflower (small head, separated into florets)
- 2 tablespoons Oil
- 1 teaspoon Cumin seeds
- 1 Onion (medium-sized, finely chopped)
- 1 inch piece Ginger (grated)
- 4 cloves Garlic (minced)
- 0.5 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 0.5 teaspoon Red chili powder (adjust to taste)
- 0.5 teaspoon Garam masala
- Salt (to taste)
- 2 tablespoons Fresh coriander leaves (chopped (for garnish))
- 1 tablespoon Lemon juice
Directions
1. Heat oil in a large pan or skillet over medium heat. Add cumin seeds and let them splutter.
2. Add finely chopped onion and sauté until golden brown.
3. Add grated ginger and minced garlic. Cook for a minute until fragrant.
4. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Stir well to combine the spices with the onions.
5. Add cubed potatoes and cauliflower florets to the pan. Mix well to coat them evenly with the spice mixture.
6. Cover the pan and cook on low heat for about 15-20 minutes, or until the potatoes and cauliflower are tender. Stir occasionally to prevent sticking.
7. Once the vegetables are cooked, add garam masala and mix gently.
8. Remove from heat and drizzle lemon juice over the dish. Mix well.
9. Garnish with freshly chopped coriander leaves.
10. Serve hot as a side dish or with roti or rice.
